Over the past year, the time between announcing a new Lake Norman taproom and pouring the first beer has ranged from about three weeks to nearly a decade. The projects that opened quickly had little or nothing to build. The ones still behind construction fencing are the largest builds on the list.
Seven brewery and taproom projects around the lake are moving this fall. If you sort them by how much construction each one needed, they also fall into order by how close each is to opening.
| Project | Location | What it took | Status, mid-October 2026 |
|---|---|---|---|
| Michael Waltrip Signature Bar at Eleven Lakes Brewing | 10228 Bailey Rd. #201, Cornelius | A new bar inside an existing taproom | Open |
| Suffolk Punch Brewing | 16912 Birkdale Commons Pkwy., Huntersville | Build-out inside Birkdale Village | Open since Dec. 13, 2025 |
| Churchill Brothers Brewing and RudeDog Distillery | 275 S. Broad St., Mooresville | A yearlong renovation of an existing building | Certificate of occupancy issued, final NC ABC steps pending |
| Corkscrew Wine Shop | Holbrook Town Center, 111 Gilead Rd., Huntersville | Ground-floor retail space | Expected this fall |
| The View Beer Garden & Sports Lounge | 155 Pinnacle Lane, Mooresville | Reuse of the former Apps & Taps site | No opening date released |
| Royal Bliss Brewing | Harbor View Drive, Cornelius | New 10,000-square-foot brewery and beer garden | Still listed as under construction after a 2025 target |
| Olde Mecklenburg Brewery | Northeast Cornelius | Centerpiece of a two-part development | Owners hope to open in 2028 |
Three Weeks From Announcement to Race Week
The fastest project on the lake had no construction phase at all. Cornelius Today reported on April 29, 2026 that Michael Waltrip Brewing planned a Cornelius Signature Bar inside Eleven Lakes Brewing, with Waltrip memorabilia, branded beers, merchandise and themed events. By May 20, Michael Waltrip Brewing was promoting a race-week party at the bar. That took about three weeks, because the walls, taps, license and regulars were already there.
The Signature Bar is at 10228 Bailey Rd. #201 and is built around race watch parties and racing-themed entertainment. Eleven Lakes is closed Mondays. It opens at 4 p.m. Tuesday through Thursday and closes at 10, runs 2 to 11 p.m. on Fridays, noon to 11 on Saturdays and noon to 8 on Sundays.
Suffolk Punch took the slower version of the same route. The Charlotte-based brewery didn't buy land. It moved into Birkdale Village, and Queen City News reported that it opened there on Dec. 13, 2025, after a build-out the owners admitted had taken a long time. The space has a full-service lower level and a rooftop bar overlooking The Plaza. The all-seasons patio was still under construction in a December 2025 CharlotteFive report, with plans to enclose and heat it once finished. Ask at the door whether it's open before you plan a cold-night visit around it.
The kitchen makes its food from scratch. The menu includes charcuterie boards, a Bavarian pretzel with beer cheese, chili, 10-inch flatbreads and piadine, and food service ends an hour before closing. According to the Birkdale taproom page, hours are 11 a.m. to 9 p.m. Monday through Wednesday and Sunday, 11 to 10 on Thursday, and 11 to midnight on Friday and Saturday. Birkdale Village's own directory lists earlier closing times, so check before a late-night visit.
A Year Inside an Old Building on Broad Street
Renovating an existing building is the next step up, and downtown Mooresville is about to show how long that takes. Churchill Brothers Brewing and RudeDog Distillery have spent a year renovating 275 S. Broad St. They passed their required inspections and received a certificate of occupancy. As of early October, they were working through final steps with the North Carolina Alcoholic Beverage Control Commission, Lake Norman Publications reported.
Two local families share the building. Brothers Joel and Nick Churchill founded the brewery. Joel brews and Nick runs the business, and Jamie Churchill helps with recipes. RudeDog belongs to Dave "Rudy" Rudy and Sheri Rudy. Racing brought Dave to Mooresville in 2004, after he worked as operations director for the Richard Petty Driving Experience. The Churchill team summed up its approach in the same Lake Norman Publications article: "Our goal is simple: brew beer worth sharing."
No opening day has been announced. The Churchill Brothers website still says "Soon 2026." The owners told Lake Norman Publications, "We're getting closer every day to opening our doors." With inspections behind them, state licensing is the last step left, and that is about as far along as a project can be without a date on the calendar.
Corkscrew Wine Shop is in a similar position in Huntersville. It isn't a brewery, but it will sell draft and packaged craft beer. It's moving into a 1,800-square-foot ground-floor space at Holbrook Town Center on Gilead Road and is expected to open this fall. Its homepage still says "Coming Soon."
The View Beer Garden & Sports Lounge doesn't fit the pattern as neatly. It's planned for 155 Pinnacle Lane in Mooresville, where Apps & Taps closed two years ago, and will offer waterfront dining and live entertainment. The building is already there, but no opening date has been released. An existing building helps a project open sooner, but it doesn't set the date.
Years for Anything Built From the Ground Up
The projects that need new construction have the longest waits. Royal Bliss Brewing won a 2024 rezoning for a second location on Harbor View Drive in Cornelius. It's planned as a 10,000-square-foot microbrewery and restaurant with an outdoor beer garden and a music stage. The original estimate was completion in 2025. As of October 2026, the Town of Cornelius still lists the project as under construction.
Olde Mecklenburg Brewery's Cornelius location has been the longest wait. According to a 2021 Lake Norman Publications report, owner John Marrino bought the former MacLean-Curtis Screw property in 2017. In 2021, the town approved two adjoining developments tied to the brewery, Greenway Gartens and Caroline. Together they covered 41 acres between northern Zion Avenue and South Street, with 650 residential units and 34,000 square feet of commercial space in the plans approved at that time. Because the brewery is the centerpiece of that larger development, it can't open on its own schedule. Lake Norman Publications describes the location as in the works for nearly 10 years, and the owners now hope to open it in 2028.
Across the lake, a 5,000-square-foot microbrewery with a tasting room was approved through a 2024 rezoning. The site is a 1.75-acre lot on the south side of N.C. 16 Business near Denver Industrial Park Road. No further updates have been made public.
The Denver project and Royal Bliss were both approved in 2024. Since then, Suffolk Punch finished its Birkdale build-out and the Waltrip bar opened in Cornelius, and neither of the 2024 approvals is open yet.
Where to Go Before Anything Else Opens
Until Broad Street opens, the open taprooms have the most going on. Cornelius canceled its 2026 Laketoberfest because of bad weather and hasn't announced a new date. Here's what's scheduled from Thursday, Oct. 22, through the following week:
- Thursday, Oct. 22: The Drunken Spelling Bee runs 7 to 9 p.m. on the Suffolk Punch rooftop, with $5 beers all night. Eleven Lakes has a Crowler & Growler Special Night from 4 to 10 p.m. and is showing App State vs. James Madison at 7.
- Friday, Oct. 23: Birkdale Social Hour starts at 6 p.m. in The Plaza with dueling pianos. World Tavern Poker runs 7 to 11 p.m. at Eleven Lakes.
- Saturday, Oct. 24: Taste of Birkdale runs 1 to 4 p.m. in The Plaza, and Suffolk Punch is one of the participating restaurants. In Cornelius, the Halloween Treat Trail runs 5:30 to 8 p.m. at Bailey Road Park, 11536 Bailey Road. Preregistration is required. Residents get in free and nonresidents pay $3.
- Sunday, Oct. 25: Eleven Lakes has $2 off four-packs and crowlers, $4 off growlers, $20 mimosa carafes and $7 beer Bloody Marys.
- Tuesday, Oct. 27: Flight Night and half-priced bottles of wine at Eleven Lakes, 4 to 10 p.m.
- Wednesday, Oct. 28: $5 Pint Night and lobster dogs at Eleven Lakes. Suffolk Punch holds general trivia at 6 p.m. every Wednesday, and kids' meals are $10 all day.
- Thursday and Friday, Oct. 29–30: Eleven Lakes has another Crowler & Growler night on Thursday and World Tavern Poker on Friday. The spelling bee is back on the Suffolk Punch rooftop Thursday evening.
Trick or Treat at Birkdale Village is on The Parkway on Saturday, Oct. 31, from 10 a.m. to noon, and maps of participating businesses are available at Concierge.
The next opening to watch is 275 S. Broad St. All that's left there is state licensing, so it's likely to open before anything on Harbor View Drive or in northeast Cornelius.
